in the kitchen: banana bread

We've used many banana bread recipes over the years, and I think most have been pretty great. But I honestly can't remember which ones were staples - so here's the one that we use now, and it's pretty delicious. So let's just say it's my favorite one, okay?

Banana Bread

1/3 cup butter (or coconut oil)
1/4 cup honey
1/4 cup brown sugar or sucanat
1 tsp vanilla extract
2 eggs
1 1/2 cups mashed bananas
1 3/4 cup white whole wheat flour
1/2 tsp salt
1/2 tsp cinnamon
1 tsp baking soda
1/4 cup water

1/2 cup dark chocolate chips

1. Preheat oven to 325*
2. Lightly grease a 9x5 inch loaf pan with butter.
3. Combine flour, cinnamon, and salt in a bowl. Whisk and set aside.
4. In another large bowl, combine butter, honey, and sugar and beat for two minutes. Add the eggs and lightly beat until just combined. Mix in bananas and vanilla -- do not overmix. Gradually beat in the flour mixture.
5. Dilute baking soda in 1/4 cup hot water, then beat into batter.
6. Stir in chocolate chips.
7. Pour batter into pan and bake at 325* for 52 minutes. (or longer - be sure to test the middle. it's not very tasty half-cooked)

Let it sit in the pan for thirty minutes after it's cooked if you want to slice it and have it look pretty....if not, then let it cool for five and then just dig in :D

  1. Mmm, I love banana bread. Our is a recipe we've had for years (it's Gramma's) and definitely my favorite. BUT. Yours looks really good. I think imma try this...;D
